European Lobster

Red or blue?

The lobster found in the waters around Scotland is a clawed lobster species - yes, there are also lobsters without claws - and known as the "European lobster " or "common lobster".


While we always think of lobsters as being red, our Scottish lobsters are actually blue when alive and only turn red when cooked. Because of this, our lobsters are know as 蓝龙虾 in China - "blue lobster".


To make sure we talk about the same thing, we rely on latin names, which for our Scottish lobster is "homarus gammarus".

Melt in your mouth

There is a reason why lobster is regarded as a luxury item and more sought after and expensive than other shellfish. Lobster meat is plumb and juicy, with a firmness that's still smooth and soft at the same time.  It sits in-between crab meat and prawns, where it is not as flaky as crab and not as chewy as prawns. Each bite is deliciously rich and satisfying! In terms of flavour, lobster meat is sweeter and less "fishy" than crab. Cooked correctly, lobster meat simply melts in your mouth.

Rock and mud

The European lobster lives all around the British Isles and can also be found throughout the rest of Europe.


Lobsters are nocturnal and take shelter during daytime. They are usually found in waters up to 40m deep with muddy or rocky seabeds where weeds, holes and crevices give them a place to hide in. 


Sustainability

In Scotland there are landing controls in place to ensure that lobster stock levels remain at a sustainable rate. The minimum landing size is 87mm or 90mm carapace length depending on location. There is also a maximum landing size for females which is 145mm or 155mm carapace length, again depending on the exact location.


Our lobsters are caught using creels. This method of fishing is is environmentally friendly and has a minimal impact on the  marine environment.

Packing and Shipping

Our European Lobster are packaged with the utmost care to ensure they arrive in the best shape possible. We pack them in 15kg boxes. To keep the lobster cool, we add ice packs to each box.
